Cuisine Boulud is seeking experience Captain / Maitre'ds to join the opening team.
Time and Attendance
- Arrive on time and ready for scheduled shifts while following dress code guidelines and standards.
- Supervise sign in and out for each scheduled shift. Exhibit accurate and effective use of time and attendance portals and procedures. Nowsta competency a plus.
Service and Guest Experience
Lead proper steps of service and consistently communicate them to team with efficiency and grace, while maintaining a sense of urgency throughout service.Anticipates client and guest needs.Ensure constant communication with Event Chefs, other Captains, staff members, management and all FOH and BOH personnel.Conduct and / or Attend all mandatory staff meetings.Inform staff members about all menus (components, ingredients, preparation, allergens, substitutions)Educate staff members about the beverage program.Set Up, Break Down and Respect for Surroundings
Hold the team accountable for high standards of cleanliness and proper appearance throughout all areas of event venues.Leads team members to complete set up and break down tasks, with focus on hospitality, efficiency and safety.Enforce venue guidelinesPhysical Requirements

Oversee a portion of event set up and service, including a team of Servers.Takes ownership of assigned portion of event, which may include delivery, set up, execution and / or breakdown of all catering elements, demonstrating appropriate sense of urgency and teamwork at all times.Thoughtfully reviews all event paperwork in advance, and communicates concerns or suggestions.In collaboration with Maitre ‘d, assigns scheduled staff to Server, Bartender and Coat Check positions, and manages breaks according to NYS wage and hour laws.Supervises and reports accurate receiving, usage and return of all beverage, liquor and equipment via inventory sheets.Effectively communicates event plans to service team, including timeline, Steps of Service, menu and beverage plans.Acts as client and / or venue liaison, and constantly communicates changes with all team members.Coaches staff members and holds them accountable for both attitude and behavior.Understands and adheres to all guidelines and communication protocols for scheduling communication via Nowsta phone and email.Follows protocol for completion of guest or employee Incident Reports.Completes and submits post-event reports within 24 hours, including appropriate detail, with goal of strengthening the team and improving future events.Lead Captain specific duties :
An experienced Supervisor, the Captain is able to independently manage complete events. Consistently models the position and does so in a way that reflects our brand.
Consistently performs all Working Captain descriptors listed above in addition to the following;Can reliably succeed in varied environments, include private homes.Takes ownership of entire event, including delivery, set up, execution and / or breakdown of all catering elements.Assigns scheduled staff to Server, Bartender and Coat Check positions, and manages breaks according to NYS wage and hour laws.Leads effective collaboration with other Supervisors, including Sanitation Captains, Bar Captains, and Event Chefs.Drives communication of event plans to service and culinary team, including timeline, Steps of Service, menu and beverage plans.Troubleshoots and problem-solves following CBNY protocols, and obtaining input from Service Director or Sales Team when appropriate.Coaches staff members and holds them accountable for both attitude and behavior.May attend site visit or pre-event meeting with Sales Team in advance of event.Maître‘d specific duties :
An expert Supervisor, the Maitre'd is able to oversee large and complex events with over 300 guests, directing and delegating to all Captains. Performance far surpasses expectations and makes a significant contribution to the organization’s objectives. This employee is a top performer in this area, setting the highest bar.
